All of our hams are hickory smoked, but each ham has different characteristics:
Country Hams are dry-cured with salt, hickory-smoked, and aged from 90+ days (Country Hams) to 270+ days (Wigwam Country Ham). They're the classic country hams used for ham biscuits and commonly served as Christmas hams.
Surryano Hams are crafted by free-range, heritage breed hogs. They're dry-cured with salt, hickory-smoked, and aged for a minimum of 400+ days. Because of its long age, Surryano Hams have a more intense flavor and more commonly used for charcuterie boards or wine pairings.
Sweet Hams, otherwise known as Honey Hams, are brine-cured, and hickory smoked. With no age on these hams, they have a sweeter and milder taste than the country and Surryano Hams. These hams are more commonly served during Easter.
